The Pasilla Bajio offers a rich, smoky, mildly hot flavour to many dishes, dark brown, wrinkled dried pod. Adds character to red chilli enchilada sauce and salsas. When used as a dried pod or in powder form, it is a very flavourful ingredient in many mole sauces.
