Oregano is extremely flavourful in both fresh and dried forms. When fresh it is sweeter and less pungent than when dry. It goes especially well with tomatoes and olive oil, making the perfect seasoning for pizza. Oregano perfumes many dishes in Italian cooking; it is often sprinkled on bruschetta, and included in marinades for grilled fish and meats. To dry oregano, remove the leaves from the plant and spread them on a cloth in the sun; after a few days they will be dry and ready store.

Adaptable to most good garden soils that are well-drained, prefers a sunny position.
