The bright blue star-shaped flowers in bloom make Borage one of the prettiest herb plants. The flavor of the leaves resembles that of cucumber.
Borage is a hardy annual native of northern Europe and the Middle East making it ideal for temperate regions. Attracts beneficial insects and makes an excellent companion plant for tomatoes, squash, and strawberries.
Fresh flowers can be used as a garnish or tossed into salads. Candied flowers are beautiful decorations for cakes and other desserts. Young borage leaves can be cooked like spinach and taste like cucumber. Borage is also known as bee’s bread because honey bees love nectar.
Aadaptable to most garden soils Borage is not a fussy plant but the richer the soil the bushier the plant. Prefers a sunny protected position.
